Greek Yogurt Peach Pops! ♡

In light of our #LiveFitSummer here at The Live Fit Girls we wanted to share a PERFECT summertime recipe, Healthy Peach Popsicles!

We get so excited each summer when it’s peach season and these reddish-orange beauties pop up in abundance in the produce sections. There is not much better than a perfectly ripe peach on a hot summer day.

Well, maybe there is…we’re literally suckers for POPSICLES! So we decided to combine the two into one of our all-time summer favorites.

We wanted our pops to be as healthy as possible so we decided to use Greek yogurt as our base, this way we have a high protein popsicle that is perfect as an after workout snack! Blend your yogurt with some peaches, come coconut milk, a splash of vanilla, a drizzle of honey and your are ready to go!

We found these Popsicle Molds on Amazon and they are the perfect size for a snack, dessert, or even breakfast! With each pop totaling at only 80 calories each, you can have one (or two!) and still look fab in your bikini this summer! 😉

Healthy Peach Pops

Ingredients

For the Peach Layer

  • 34 ripe peaches, pitted and sliced
  • 1/4 cup coconut milk (the refrigerated kind, not the canned kind)
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract

For the Cream Layer

  • 1 1/2 cup nonfat Greek yogurt
  • 3/4 cup coconut milk
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract

Instructions

  1. In a food processor or blender, add all ingredients for the peach layer and blend until smooth.
  2. In a bowl combine all ingredients for the cream layer and mix until smooth.
  3. Alternating between peach and cream layers, spoon or pour mixture into popsicles molds.
  4. Place popsicle sticks in molds and freeze for at least 2 hours.

Notes

  • Depending on the types of molds you use you may need to let the popsicles thaw for 5 minutes before serving.
