One thing though, that is not new, is my tried and true Pineapple Mango Salsa!
I have been making this salsa for the last 4 years and it NEVER fails! The first time I made this was the summer I moved out of my mom’s house and was living on my own.
I invited her over for dinner and made Blackened Mahi Mahi with this salsa. To this day it is still my favorite way to enjoy this salsa! But it’s also excellent over grilled chicken, in tropical tacos (Nik’s personal favorite!), served with homemade pita chips, or over a tropical-inspired salad! However you want to enjoy this summer salsa is up to you!
- 2 cups pineapple, diced small
- 1 mango, diced small
- 1 avocado, diced small
- 1/2 red bell pepper, diced small
- 1/2 cup green onions
- 1 jalapeño, seeded and minced
- 2 cloves garlic, minced
- juice from 1 lime
- black pepper
- Mix all ingredients together in a medium bowl until combined.
