These Pumpkin Waffles are the perfect blend of pumpkin, spice, and everything nice!! 😉
Made with protein packed Greek Yogurt and healthy Oat Flour, these waffles will keep you right on track to your goals for the Challenge!
Another amazing thing about these waffles? They are PERFECT to make ahead of time and pop in the freezer, just what you need when running out the door for your #WakeUpWorkouts!
Prepare them on the weekend, let them cool, and freeze them individually. When you want a power-packed breakfast, take one out and pop it in the toaster, just like when you were growing up! A no-fuss breakfast is the way to go! Also, try our Apple Pie Breakfast ideas too for a stress-free morning!
- 3/4 cup oat flour (you can also grind oats in your food processor)
- 1/2 cup Greek yogurt
- 1/2 cup pumpkin puree
- 1 egg, beaten
- 2 egg whites, beaten
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ground ginger
- Preheat waffle iron.
- Mix all ingredients together until well combined.
- Lightly spray waffle iron with coconut or olive oil.
- Scoop out 1/4 cup waffle mix and pour evenly into the waffle iron.
- Cook for about 5 minutes until golden brown and done.
We also found out that yesterday happened to be National Pancake Day!! So, if you’re in the mood for some flap-jacks, try our Two-Ingredient Pancakes!
