Am I the only one that is addicted to KIND Bars?
Apparently not, considering that when I posted a picture of this on Facebook the other day, everyone wanted the recipe!
Now, I know I say that these next two weeks were dedicated to Tasty Tailgate Treats for the Super Bowl…but hey! Who says you can’t make these as a tasty snack for the big game? I promise they will be a TOUCHDOWN!
I have at least one KIND bar a day, usually as an afternoon snack to hold me over until dinner. And if you’re an addict like me, you know that can definitely add up…$$$
So I set out to make my own, homemade KIND Bars! I was able to make these bars for just $.70 a bar!…That’s less than HALF of what a bar normally costs. The secret is to buy nuts in bulk so that you can save money.
I recently took a trip to Costco and was presently surprised with how many organic and healthy options they have there. (Let me know if you would like a list of Live Fit Girl Approved foods from Costco in the comments!) I was able to buy a 3 pound bag of almonds as well as walnuts, saving over a dollar per pound on what I normally pay at Trader Joe’s – trust me with the amount of nuts we eat in this house, 3 pounds will not last that long…
The hardest part about making these bars is making sure you cook the honey and rice syrup to the right temperature. I HIGHLY recommend getting a candy thermometer for this (they’re only $10), because if you don’t cook them enough you will have a very sticky bar that doesn’t hold well. If you cook them too much, they will be more like peanut brittle and very hard.
I made the Dark Chocolate Sea Salt Bars but I will be experimenting in the next few weeks to make the Fruit & Nut Bar (let me know if you want that recipe too! 🙂 ) I also made these without crisp rice because, quite frankly, I did not have the patience to puff my own rice…
BUT, they still turned amazing, and I don’t even miss the crisp rice!
- 2 cups whole raw almonds
- 3/4 cup whole peanuts
- 3/4 cup raw walnuts, chopped
- 1/2 cup honey
- 1/3 cup brown rice syrup
- 3/4 teaspoon sea salt, divided
- 1 teaspoon vanilla
- 2/3 cup dark chocolate chips
- 2 teaspoons coconut oil
- Line a 13x9 backing dish with parchment paper allowing 2 inches to hang over the sides (this helps take the bars out). Grease the parchment paper lightly with coconut oil and also grease the bottom of a large-bottomed glass with coconut oil (you will use this to press the mixture together).
- Lightly roast the almonds, peanuts, and walnuts on a baking sheet for 10 minutes at 350 degrees. Remove from the oven, place in a large mixing bowl, and set aside.
- In a small saucepan, combine honey, rice syrup, 1/4 teaspoon sea salt, and vanilla over a medium-high heat.
- Stir frequently until temperature reached 260 degrees on your candy thermometer.
- Once honey mixture reaches 260 degrees, remove from heat, quickly pour over nut mixture, and stir to evenly coat the nuts.
- Quickly pour entire mixture into the lined baking dish and use the greased class bottom to press the mixture down to close any holes in the mixture.
- Sprinkle the top with 1/2 teaspoon sea salt and cool in the freezer for 10-15 minutes.
- While still lightly warm, remove the mixture from the baking dish and place on a cutting board.
- Cut into 20 bars using a large, very sharp knife. Allow bars to cool another 30 minutes.
- Combine chocolate and coconut oil in a small bowl and microwave for 20 second intervals until almost completely melted. Stir to melt the remaining chocolate.
- Pour chocolate mixture into a ziplock bag and seal. Cut a very small corner off the bottom of the bag and drizzle chocolate over each bar.
- Place bars back in the refrigerator for 5-10 minutes to allow the chocolate to set.
- Individually wrap in plastic wrap or parchment paper and store in the refrigerator for freshness.
