As I mentioned, the other day, I went to Ladies Night Out at my yoga studio the other night. One of the best parts about taking an entire night to relax, stretch, and restore. It brought on a feeling of total detoxification. 

My friend Katie and I both felt so rejuvenated for the entire weekend. I really think it was the Restorative Yoga class that we took and surprisingly the Kritan yoga we participated in.

After we went back Saturday for our second Aerial Yoga class, I got home and was starving. But I really wanted something that would make me feel as if I was continuing all the good I was doing for my body. So I wanted to make a sort of “detox” type salad, that tasted refreshing and would make me satisfied without “weighing me down”…do you know what I mean?

Luckily, I have an abundance of fresh veggies right now in my fridge from our local CSA. So I sort of just threw a whole bunch of shredded veggies together to make a rainbow salad. I used some Tahini I had to whip up a quick dressing. And I topped everything with some edamame for protein and hemp seeds for a little extra superfood boost!

Rainbow Detox Salad

This salad is a perfect sort of “detox” salad because it’s filled with some many nutrients to give your metabolism and body a jump start.

Cabbage is a fantastic detoxifying food because it filled with antioxidants that prevent damage from free radicals. It also contains compounds, called glucosinolates, that promote to elimination of carcinogens that can cause cancer. Cabbage is also high in vitamin C and K.

Parsley helps eliminate salt that has built up in the kidneys which helps the body eliminates accumulated heavy metals you wight ingest like mercury, and lead.is a Parsley is also a natural blood sugar balancer, parsley protects against insulin resistance and also acts as a natural diuretic without lowering potassium levels. 

Hemp seeds are amazing for alkalizing your body. They contain more chlorophyll than any other seed, making them great for relieving inflammation and detoxifying and purifying the blood.

This salad is also filled with tons of fiber, and the carrots are rich in beta-carotene, important in eye-health and maintaining healthy skin, as well as potassium, which helps balance out fluids in your body. Red bell peppers are extremely rich in vitamin C, which prevents illness, and Tahini is rich in minerals like phosphorus, lecithin, magnesium, potassium and iron.

Detox Rainbow Salad with Tahini Dressing

Ingredients

Scale

For the Salad

  • 1/4 red cabbage, shredded
  • 1 cup shelled edamame
  • 2 carrots, shredded
  • 1 red bell pepper, sliced thin
  • 2 handfuls of fresh parsley, chopped
  • hemp seeds to garnish

For the Tahini Dressing

  • 1/4 cup Tahini
  • 1/4 cup fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons maple syrup
  • 1 clove garlic, minced
  • salt & pepper to taste

Instructions

  1. In a large bowl toss all of the salad ingredients together.
  2. In a small bowl, whisk together Tahini dressing ingredients until smooth. Drizzle the dressing over the salad and toss to evenly coat the salad.
  3. Sprinkle the salad with hemp seeds, and enjoy!

  1. YUM! I love tahini.. this looks like such a light salad, I can see where it would’ve kept you feeling detoxed and refreshed šŸ™‚ Doing anything that makes me sweat or makes me laugh always helps me ‘detox’!
