It’s pretty obvious that I LOVE cooking….but even I get stuck in a rut sometimes. With all the recipe development and creation I do on here, and for some of the companies I work with, sometimes my creation is at a zero for my own meals — especially when I am cooking for Nik too!
And Nik is the kind of person that can NOT have the same meals over and over — me, however — I could eat baked salmon and asparagus just about every night and be satisfied…but, since Nik doesn’t like salmon (I know right? What is wrong with him??), that obviously won’t fly.
So, when I had the chance to try Terra’s Kitchen meal-kit delivery I was SO excited! First, I didn’t really have to think about anything. I looked at their menu, decided on a few tasty options, and they delivered it straight to my door. Seriously, so easy.
But, the COOLEST thing? Well, Terra’s Kitchen goes above and beyond. First, they send all the ingredients in this crazy eco-friendly “vessel” as they call it. Guys, it seriously is like a deliverable, mini refrigerator. It has drawers, little latch doors, and is completely insulated. It’s crazy!
They also take care of ALL of the return shipment cost, and delivery dates. Seriously — my vessel arrived at about 4pm on a Thursday, and before I could even get a great picture of the vessel for you ladies (with the pretty natural light) the FedEx delivery man was knocking on my door to pick it up at 8am the very next morning! I was not expecting that — however, I LOVE it because if you’re like me, things like setting up a delivery time gets pushed to the very end of the to-do list.
But, the pick up was already set, and you just peel off the shipping label and there is the return label already to go! PERFECT. Each vessel is re-used again and again, to eliminate waste from boxes and cartons. I LOVE this, you know I am a huge advocate for not wasting and decreasing our footprint on the earth, so this is awesome of Terra’s Kitchen to do.

Anyway…let’s get to the actual best part right??…The meals!
For my first order, I got the Terra Buddha Bowl, Grilled Lamb with Pan-Roasted Asparagus, Olives, & Tomatoes, Roasted Brown Sugar Salmon with Orange Jicama Salad, and Avocado Lime Corn Soup.
YUP, I got FOUR meals!! Each meal made two servings — which is perfect for just me and Nik.
The first meal we made was the Grilled Lamb — oh my gosh — SO good! I shared that one over on Snapchat — we made it the very first night, we couldn’t wait we were too excited to try it!
The second one I made was this delicious Buddha Bowl. This one was more for me, but Nik did try and he liked it too! (I’m REALLY trying to get him to eat more vegetarian options! lol)
This Buddha Bowl was filled with sesame rice, arugula, spiced chickpeas, sugar snap peas, red onions, and a tasty avocado dressing! SO good! (I even re-ordered this for my delivery this week, it was that good! )
So, for each meal, the ingredients come in separate little (recyclable containers) that are each numbered according to there recipe number (i.e. Buddha Bowl was number 170), so you can easily separate the ingredients when you put them in the fridge, if you are OCD like me.
There may be the smallest amount of prep involved — like slicing tomatoes, but other than that, everything is pre-measured, most of it is chopped, and ready to just throw together. Each meal takes no longer than 30 minutes to prepare and tastes amazing!
The next one I snagged a picture of was the Brown Sugar Salmon — also delicious! I’m not sure why but I would have never thought of combining orange juice and brown sugar to create a marinade for the Salmon — but it was delicious! It was served over a bed of arugula, jicama (a newer found love that I am OBSESSED with — I’ll do a post soon!), and some roasted almonds — my fav!
The very last — but definitely not least — thing that I love about Terra’s Kitchen is that they use real food. They source the highest quality food source directly from the Earth. They source seafood that is sustainable and wild caught, AND help the fisherman and local economies. They use antibiotic and hormone-free meats and poultry – and ladies this is HUGE. It may just be my favorite part of the whole service. I know that the quality of the meals will be amazing.
