So since moving to California, I have been on a huge kick of trying to make the most of my time. I am trying to make my time to most efficient as possible and have started time blocking to help me get more down and reach my goals.
One of those things has been to meal prep much more frequently. When we lived in Minneapolis, I sort of fell off the meal prep wagon a bit…. DOn’t get me wrong — I have always love meal prepping, I just didn’t do it as frequently or consistently….But since moving to LA, meal prepping has become another BIG weekend “to-do”.
One of my favorite things to prepare each weekend is a big huge fruit salad. I love having a fruit salad to help me when I need a quick snack or meal. And I have found the BEST way to make fruit salads!
The key is adding a tasty little “dressing” of lime juice and a tiny bit of honey.
And also, when making the best fruit salad, it’s important to add some superfoods to help power you through your day. goodnessknows snack squares are perfect for topping on your fruit salads because it is divided into four snackable squares per serving — perfect for adding a little extra goodness to each bite!

Back to to this amazing fruit salad!! It is SO simple — just cut up a bunch of different fruit. I choose my favorites — pineapple, strawberries, kiwis, and blueberries. I them sprinkled some superfood chia seeds on top, gave it a quick toss, and topped it all with some chocolatey goodness with the cranberry, almond, dark chocolate goodnessknow snack squares.
SO simple — tastes amazing — and super filling and satisfying!
- 1 pineapple, peeled & diced
- 1 pint of strawberries, hulled & halved
- 4 kiwis, peeled & sliced
- 1 pint of blueberries
- juice from 1 lime
- 1 tablespoon raw honey
- goodnessknows snack squares
- 2 tablespoons chia seeds
- shredded coconut
- goji berries
- In a large bowl, combine the prepared fruit.
- In a small bowl whisk together lime juice and honey until smooth. Drizzle the dressing over the fruit and gently toss to mix.
- Sprinkle with toppings, and enjoy!
