Skinny Caramel Iced Latte
As you may or may not know, I have lived in 5 states within the last 3 1/2 years. Nik’s job moves us around A LOT. I never would have thought I would live in most of the places we’ve ended up…I love NYC but never once had the desire to live there (but, I’m extremely glad I did!), NEVER thought I would live in New Jersey in my wildest dreams ( I could have done without that one…), and now currently in Minneapolis, I’m enjoying myself, but I’d like to eventually have my “forever” home…
But, before all the moving around I made the great trek from Connecticut to North Carolina all by myself. I truly LOVED North Carolina…but after all the moving I will say I’m glad that didn’t end up being my forever home.
What I am glad for is all of the experiences I’ve had in moving. With every move I developed a new love of something I didn’t have before…In NYC it was my love of donuts 🍩…In Minneapolis it’s my love of good burgers…and in North Carolina it was my love of good coffee.
Ok, I know everyone loves coffee…but I’m talking GOOD coffee.☕️ Nik and I found our favorite coffee EVER. We still miss it and compare ever other coffee shop to this one. If you’re ever in Charlotte, North Carolina, head over to 7th Street Market (or Atherton Mill Market) and get yourself a coffee from Not Just Coffee. I promise it will not disappoint!😉
My favorite drink still to this day, is their Caramel Iced Latte.💕 The owner, James, makes homemade caramel sauce that is to die for. The moment Nik and I found out we were moving to NYC, I made it a mission to perfect a caramel sauce to try and recreate my absolute favorite drink of all time.
Well if you don’t know caramel can be pretty challenging to make…but I finally found the perfect (and easy!) microwave recipe! And it uses my favorite healthy ingredient swap, coconut sugar. To keep things super “skinny” I use Unsweetened Vanilla Almond Breeze Almond Coconut Milk for a little extra flavor! The caramel lattes from Not Just Coffee are actually what started my love of almond milk. In my opinion, they tastes wayyyy better with almond milk over dairy milk. (Not to mention it saves a whole bunch of calories!)👍

- Total Time: 5
Ingredients
- 2 ounces espresso or strong brewed coffee (I use a Moka Pot)
- 2 tablespoons Simple Skinny Caramel Sauce
- 1 1/2 cups Unsweetened Vanilla Almond Breeze Almond Coconut Milk
- handful of ice cubes
Instructions
- Brew expresso/coffee according to manufacturer’s instructions.
- In a large serving glass mix together espresso and skinny caramel sauce. Pour in almond milk and stir.
- Add ice and enjoy! 🙂

oh my gosh i love caramel lattes! i’m like a starbucks addict…but i want to try this i bet is so much healthier than all the chemicals they put in theirs
