Apple Pie for Breakfast!

Many of you are wondering what kind of breakfast to have on the #Lean4Halloween Challenge. We have put together TWO delicious recipes for you that are perfect for these chilly mornings AND will give you energy all day long.

Nothing says fall more than a Warm Apple Pie!

These Apple Pie breakfasts are the best of both worlds! In your parfait and overnight oats, you get a nice cool base that will provide you with lots protein and good carbs to help you power through the morning and your #WakeUpWorkouts! Top that with some warm, tasty apples and an early morning breakfast can’t get any better!

Both of these recipes are made with Greek yogurt for lots of protein and both are loaded with complex carbs from the oats or our homemade Super Simple Granola to prevent hunger mid-morning. Each recipe makes two servings, perfect for sharing with a friend or for meal prepping ahead of time!

Because you are probably in a rush in the morning (like us!), you can make these ahead of time for a quick and easy breakfast. The night before, prepare your yogurt or oat base and refrigerate in your to-go container. Sauté your apples and keep them in a separate container. Before you leave in the morning, warm up your apples, top your parfait or oats, and rush out the door! 😉

Apple Pie Parfait

  • Total Time: 10

Ingredients

For the apples

  • 1 red apple
  • 1 teaspoon cinnamon
  • 1 teaspoon coconut oil

For the yogurt

  • 2 cups nonfat Greek yogurt
  • 1 tablespoon pure maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 cup Super Simple Granola

Instructions

For the apples

  1. Slice apples into 1/2 inch bite-sized pieces.
  2. Heat coconut oil in a large skillet over medium heat.
  3. Sauté apples and cinnamon for 5-7 minutes, or until soft and lightly browned.

For the yogurt

  1. Mix remaining ingredients, except granola, together.
  2. When apples are finished, layer yogurt, granola, and apples into 2 small bowls.

Apple Pie Overnight Oats

Ingredients

For the apples

  • 1 red apple
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon

For the oats

  • 1 cup rolled oats
  • 1 cup yogurt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk of choice
  • 2 teaspoons cinnamon
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons walnuts

Instructions

For the apples

  1. Slice apples into 1/2 inch bite-sized pieces.
  2. Heat coconut oil in a large skillet over medium heat.
  3. Sauté apples and cinnamon for 5-7 minutes, or until soft and lightly browned.

For the oats

  1. Mix all the remaining ingredients, except for walnuts, together until combined.
  2. Refrigerate overnight, or at least 4 hours.
  3. Divide oats into 2 servings and top with warm apples and walnuts.
