Apple Pie Overnight Oats

For the apples

  • 1 red apple
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon

For the oats

  • 1 cup rolled oats
  • 1 cup yogurt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk of choice
  • 2 teaspoons cinnamon
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons walnuts

Instructions

For the apples

  1. Slice apples into 1/2 inch bite-sized pieces.
  2. Heat coconut oil in a large skillet over medium heat.
  3. Sauté apples and cinnamon for 5-7 minutes, or until soft and lightly browned.

For the oats

  1. Mix all the remaining ingredients, except for walnuts, together until combined.
  2. Refrigerate overnight, or at least 4 hours.
  3. Divide oats into 2 servings and top with warm apples and walnuts.
