Apple Walnut Chicken Salad

Ingredients

Scale
  • 1 large chicken breast, cooked and shredded
  • 6 big handfuls of greens
  • 1 reg apple – I used Honeycrisp!
  • 1/3 cup walnut pieces
  • 1/3 cup dried cranberries, unsweetened
  • 12 ounces goat cheese, crumbled

For the Dressing

  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil

Instructions

  1. Mix salad ingredients to gently toss.
  2. Whisk together dressing and drizzle over salad.

Notes

  • If preparing this in advance, store dressing separately so your salad doesn’t get soggy!
