  • Prep Time: 5
  • Cook Time: 25
  • Total Time: 30

  • 1 shot espresso OR 1/4 cup strong brewed coffee
  • 1/4 cup milk of choice (I used 1%, but any any kind is fine)
  • 1/2 cup nonfat Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cup oat flour OR whole wheat flour
  • 1/2 cup chocolate protein powder (I used Manitoba Harvest Hemp Pro70)
  • 1/3 cup coconut sugar
  • 3 tablespoons raw cacao powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup dark chocolate chips

  1. Preheat oven to 375 degrees, and lightly grease a muffin tin with coconut oil.
  2. In a medium bowl mix together the espresso, milk, Greek yogurt, eggs, and vanilla extract until smooth, and set aside.
  3. In a large bowl whisk together the flour, protein powder, coconut sugar, cacao powder, baking powder, and baking soda until combined.
  4. Add the wet ingredients into the dry and stir to combine into a smooth batter.
  5. Using a 1/4 cup measuring spoon, scoop the batter evenly into the muffin tins. Sprinkle the chocolate chips over each muffin.
  6. Bake the muffins for 10-25 minutes, or until a toothpick comes out clean.
