Healthy Holiday Cookies!!

These healthy Christmas cookies are made with nut butter and coconut sugar for a lower glycemic load than traditional cookies. They are grain-free but still full of holiday cheer!

‘Tis the season for tons of cookies!!

The holidays wouldn’t be the same without batches and batches of cookies finding their way to your work, your home, and ultimately your mouth!

To help you stay on track, I have created FIVE Healthy Christmas Cookies just for you!

These cookies are grain-free, gluten-free, and refined-sugar free! They are made with nuts and nut butters, as well as with healthy coconut palm sugar to help keep the glycemic index down.

KEEP IN MIND, just because they are made with healthier ingredients doesn’t mean you can go wild. Only ONE cookie per serving (ok, ok… maybe two!)

Healthy Peanut Butter Blossoms

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: 16 cookies 1x

Ingredients

Scale
  • 1 cup smooth all-natural peanut butter
  • 1 egg, lightly beaten
  • ½ teaspoon vanilla extract
  • ½ cup coconut sugar
  • 16 dark chocolate kisses, foil removed

Instructions

  1. Preheat oven to 350°F.
  2. Mix together peanut butter, egg, and vanilla until smooth.
  3. Add coconut sugar and mix well.
  4. Roll into one inch balls and place on baking sheet about 2 inches apart.
  5. Using a fork gently press cookie dough balls down vertically and horizontally to make a criss cross pattern to flatten slightly.
  6. Bake for 8-10 minutes.
  7. Once finished baking, remove from the oven and gently press a chocolate kiss into the cookie to flatten slightly.
  8. They will be very soft so be patient and let them cool 5 minutes before removing from cookie sheet.

Healthy Chocolate Crinkle Cookies

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: 16 cookies 1x

Ingredients

Scale
  • 1 cup smooth all-natural almond butter (or peanut butter)
  • 1 egg, lightly beaten
  • ½ teaspoon vanilla extract
  • ½ cup coconut sugar
  • ½ cup raw cacao powder
  • 12 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F.
  2. Mix coconut sugar and cacao powder together, then mix in the almond butter, egg and vanilla until smooth.
  3. Roll into one inch balls and place on baking sheet about 2 inches apart.
  4. Gently press cookie dough balls down with your palm to flatten slightly.
  5. Bake for 8-10 minutes.
  6. Once finished baking, dust with powdered sugar and gently bang the cookie sheet on the counter to flatten the cookies and make them “crack” slightly.
  7. They will be very soft so be patient and let them cool 5 minutes before removing from cookie sheet.

Healthy Ginger Molasses Cookies

  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: 16 cookies 1x

Ingredients

Scale
  • 1 cup all-natural almond butter, unsalted
  • 1 egg
  • 2 tablespoon blackstrap molasses
  • 1/2 teaspoon vanilla extract
  • 1/2 cup coconut sugar
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamon
  • 2 tablespoons organic sugar, in a small bowl

Instructions

  1. Preheat oven to 350°F.
  2. Mix coconut sugar and spices together together, then mix in the almond butter, egg, molasses, and vanilla until smooth.
  3. Roll into one inch balls, roll in the sugar, and place on baking sheet about 2 inches apart.
  4. Gently press cookie dough balls down with your palm to flatten slightly.
  5. Bake for 8-10 minutes.
  6. Once finished baking, remove from oven and gently bang the cookie sheet on the counter to flatten the cookies and make them “crack” slightly.
  7. They will be very soft so be patient and let them cool 5 minutes before removing from cookie sheet.

Healthy Chocolate Chip Cookies

Ingredients

  • 1 cup smooth all-natural almond butter (or peanut butter)
  • 1 egg, lightly beaten
  • ½ teaspoon vanilla extract
  • ½ cup coconut sugar
  • ½ cup dark chocolate chips OR cacao nibs

Instructions

  1. Preheat oven to 350°F.
  2. Mix together almond butter, egg, and vanilla until smooth.
  3. Add coconut sugar and mix well, then fold in chocolate chips.
  4. Roll into one inch balls and place on baking sheet about 2 inches apart.
  5. Gently press cookie dough balls down with your palm to flatten slightly.
  6. Bake for 8-10 minutes.
  7. They will be very soft so be patient and let them cool 5 minutes before removing from cookie sheet.

Healthy Coconut Milk Fudge

  • Cook Time: 60 minutes
  • Total Time: 60 minutes
  • Yield: 64 squares 1x

Ingredients

Scale
  • 1 can full fat coconut milk
  • 1/4 cup honey
  • 4 cups dark chocolate chips
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a 9×9 glass casserole dish with plastic wrap or parchment paper and lightly spray with coconut oil.
  2. Heat coconut milk in a large heavy saucepan over a medium-high heat until it starts to boil, stirring constantly to prevent burning.
  3. Once boiling, lower to temperature to a simmer and add honey, mixing to melt and incorporate.
  4. Allow to simmer and thicken for 30-45 minutes, stirring occasionally.
  5. Once the coconut milk is very thick (the consistency of condensed milk) add your chocolate chips. Stir frequently to allow the chocolate to melt.
  6. Once chocolate is fully melted and smooth, pour into the casserole dish.
  7. Smooth mixture evenly into the dish and refrigerate for at least 4 hours or overnight.
  8. Cut into 1 inch squares.

Notes

  • Only enjoy 1-2 squares per serving, this fudge is very rich!
