Healthy Pizza?…YES! and it’s delicious!
This is not only called “Skinny Pizza” because it’s much lower in calories than regular pizza, but because it is literally, skinny, as in the crust is super thin! Yum yum! 🙂
Sure I have a cauliflower crust pizza on the blog already, but that whole process can take a bit of time, and when you want some pizza NOW…it may not be the pest option. (DOn’t get me wrong though, it tastes AMAZING, and is worth the little extra time!)
But making pizza on a tortilla is SUPER fast, and saves so many carbs, as well as calories!
I use Ezekiel tortillas for my pizzas, but have also used whole wheat, and you can easily make it gluten free with a gluten free tortilla such as brown rice tortillas, or even a corn tortilla.
I LOVE pesto on my pizza, so I make a skinny pesto sans cheese, and then top my pizza with some part-skim mozzarella, but feel free to experiment. Try making your pizza however you’d like to! Try it with tomato sauce, or plain olive oil, use chicken or skinny buffalo sauce, or even PINEAPPLE and low-sodium ham…

- Preheat oven to 350 degrees.
- Chop any vegetables or meat that you will be using. I microwaved my broccoli for a minute to soften it a bit.
- Spread pesto or tomato sauce over your tortilla, cover with your toppings.
- Bake on a cookie sheet for 10-15 minutes, until tortilla edges are lightly browned.
