Garlic Mashed Cauliflower

  • 1 medium head cauliflower
  • 1/4 cup grated Parmesan
  • 12 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon chopped fresh or dry chives, for garnish


  1. In a stockpot, boil water over high heat.
  2. Cut cauliflower into small pieces and boil for about 6 minutes, or until fork tender.
  3. Drain well and pat dry with paper towels.
  4. Place cauliflower, parmesan cheese, garlic, salt and pepper in a large bowl. Blend with a hand mixer until almost smooth.
  5. Garnish with chives.
