So, this past week we FINALLY made plans for an adventure that we’ve been talking about for almost 3 years….Taking a roadtrip down the Golden Coast!
If you didn’t know, Nik is from Los Angeles, and our hopes are to move back there sometime next year (fingers crossed!), and since we started dating we have been talking about taking a trip from San Fran down the coast to LA.
We finally booked out tickets into San Fran and out of LA for the week of Thanksgiving. I am so excited because for one, I’ve never been to SF (and neither has Nik!), plus we are taking two days to visit my aunt and her fiancé — who lives in Napa. Her fiancé is vice president at a winery in Napa and we will be able to get a behind the scenes peak into what goes on on the vineyard, and we’ll be able to drink some seriously amazing wine! (YESSSS to all the wine! 😉 )
Then, we will take a few days to drive down the coast and hit up some amazing places like Monterey, Big Sur, and Santa Barbara. I seriously can not wait for a week of total bliss and being surrounded by the beautiful landscape CA has to offer!
Of course we will be taking a few hiking trips during our adventures…so, naturally, this had me thinking of snacks I would need to pack into my suitcase to bring with. (Yes, I bring my own snacks on vacation…) One of my go-to snacks I bring on any trip is my homemade trail mix. But, I wanted something a little different, and got a little pinspiration for a new creation (see what I did there?)…so I made these amazing little Trail Mix Chocolate Clusters for a more portable — and less messy — way to enjoy one of my favorite snacks!
These little chocolate morsels are seriously so easy to make and make the perfect snack to bring for lunch, to enjoy for a tasty dessert, or to bring with you on a hike! I will most definitely be bringing some with me!
**P.S. After filming I thought of another great addition instead of coconut…sea salt! YUM…dark chocolate and sea salt just go together, ya know?!Print
- 1/2 cup dark chocolate chips
- 1/4 cup trail mix (or any raw nuts, seeds or unsweetened dried fruit)
- 2 tablespoons shredded unsweetened coconut (optional)
- Prepare a baking sheet by lining it with wax paper and set aside.
- Place your chocolate in microwave safe bowl and microwave for about 2 minutes of 50% power (times will vary depending on your microwave). Once the chocolate is almost completely melted, stir the chocolate to melt any remaining chunks. This will ensure you don’t burn your chocolate.
- Using a spoon, drizzle the melted chocolate onto the wax paper creating a little dollop or circle.
- Sprinkle the dollop with the trail mix, making sure to get each type of nut or seed in the chocolate.
- If you wish, also sprinkle with some shredded coconut. Repeat until you use the remaining chocolate.
- Allow the chocolate to dry at room temperature for at least 1 hour, or place in the fridge for at least 20 minutes.
- Store in an airtight container.
