I know it seems like the cold winter means no fresh salads, right?…Wrong!

This gorgeous salad is filled with all the fruits and veggies of winter. Dark leafy greens, like kale, actually have a winter harvesting season from January to March, making them a perfect base for you winter salads.

Top your salad with winter-ripe citrus fruit like these radiant red grapefruits and deep blood oranges and you’ll also get a heavy dose of Vitamin C to help keep you healthy this season.

Sprinkle your salad with a handful of pomegranate seeds and your winter salad will be packed with powerful antioxidants that can also help keep your heart healthy and strong.

The trick to making the best tasting kale salads is to massage your kale with the dressing and let it sit for at least 30 minutes to help break down the bitter taste and rough texture kale can have. This makes kale salads the perfect salad for lunch…you don’t have to worry about having a soggy salad!

I used Honey Mustard Vinaigrette for this salad. But a Balsamic Citrus Vinaigrette would be tasty too, maybe with some blood orange juice instead of lime!

Massaging your kale is simple. First, remove any thick stalks from your greens. Then using a sharp knife, cut your leaves into half inch thick strips, or shred it using your hands. Pour the dressing over your greens and use your hands to gently rub together the leaves in small bunches. Repeat for about 1-2 minutes. You’ll be left with softer, darker greens with a silky texture.

  • 56 kale leaves
  • 1/2 grapefruit
  • 1/2 blood orange
  • 1/4 cup pomegranate seeds
  • 2 tablespoons dressing of choice (Honey Mustard Vinaigrette link above)
  • cooked chicken or shrimp (optional)


  1. Remove thick stalks from the kale and slice into 1/2 think strips or shred using your hands.
  2. Transfer your greens to a medium bowl and pour the dressing over your greens. Using your hands, gently massage the green for 1-2 minutes. Set aside to marinate for at least 30 minutes.
  3. Prepare your citrus fruits by removing the rinds and cutting into 1/2 inch thick slices, making sure to remove any seeds.
  4. Once your kale is properly marinated, top with citrus fruit, pomegranate seeds, and protein of choice (optional).
