Potatoes often get a bit of a bad rap in the health and fitness world, mainly because they’re seen as carb-heavy. But carbs shouldn’t be something we fear, they’re actually an essential nutrient for fueling our workouts and keeping us energized throughout the day.
Carbohydrates are the body’s main energy source. Not only do they provide the necessary carbs, but they’re also packed with potassium, a mineral that plays a key role in muscle function and recovery.
I personally love incorporating potatoes into my meals. In the mornings, I typically add roasted potatoes to my breakfast for that extra boost of energy. And after an evening workout, my go-to dish is a plate of healthier mashed potatoes with roasted garlic. They’re creamy, flavorful, and packed with nutrients—perfect for refueling my body without the guilt.

Equipment
- 1 Baking sheet
- 1 Aluminum foil
- 1 Sharp knife
- 1 Large stock pot
- 1 Potato masher or hand mixer
- 1 Measuring cups and spoons
- 1 Cutting board
- 1 Spoon for stirring
Ingredients
- 1 small head garlic
- 4 tablespoons olive oil extra virgin, divided
- 4 pounds red potatoes roughly chopped
- 1/4 – 1/2 cup chicken or vegetable broth or skim or almond milk
- Salt & pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the Garlic:Using a sharp knife, cut the top off the head of garlic to expose the cloves. Place the garlic on a piece of aluminum foil, drizzle with 2 tablespoons of olive oil, and wrap it loosely, creating a tent-like shape. Place the foil-wrapped garlic on a baking sheet and bake for 1 hour, or until the garlic is soft and fragrant.
- Cook the Potatoes:While the garlic is roasting, add the chopped potatoes to a large stockpot and cover them with water. Bring to a boil over high heat, then reduce to a simmer and cook for about 20 minutes, or until the potatoes are fork-tender. Once the potatoes are cooked, drain the water and set them aside in the stockpot.
- Mash the Garlic:Remove the garlic from the oven and allow it to cool until you can handle it comfortably. Squeeze the softened garlic cloves out of their skins and mash them gently with a fork.
- Combine Ingredients:Add the mashed garlic, remaining 2 tablespoons of olive oil, and 1/4 cup of broth (or milk) to the potatoes. Mash together until smooth and creamy, adding more broth as needed to reach your desired consistency.
- Season and Serve:Season the mashed potatoes with salt and pepper to taste. Serve warm, garnished with fresh herbs or a sprinkle of paprika, if desired.
