These skinny chicken tacos are FULL of flavor and lower in fat and calories. They are so simple to make and easy to meal prep too!

Ok, so who doesn’t love tacos? Am I right?

I mean, tacos even have their own day of the week — so obviously everyone loves tacos.

BUT…let’s be honest. Most tacos out there are not winning any points in the nutrient department.

So naturally, I’ve created some amazing and healthy alternatives to keep my taco cravings in check.

And these skinny chicken tacos do NOT disappoint.

They are FULL of flavor without all the added sodium, fat, and many times processed junk lots of tacos have…especially those taco kits you can buy at the grocery store.

You will LOVE adding these into your “Taco Tuesday” recipe rotations, and you’ll feel good knowing they are made with wholesome and nourishing ingredients.

Are chicken tacos healthy?

Chicken tacos can be incredibly healthy, and the best way to ensure that you are getting a super nutritional and balanced meal is to make it all from scratch.

Taco seasoning packets are notorious for very high sodium amounts and are full of additives. But with a few tweaks you can make delicious AND healthy chicken tacos.

First, these tacos are made on Ezekiel Corn Tortillas, I like sprouted corn because sprouted grains have more available nutrients than mature grains. But there are some other great tortilla options as well like cassava flour tortillas, or even using lettuce wraps for a low carb option!

Next, this taco recipe uses a homemade dry taco seasoning — so it’s incredibly simple. I actually have the seasoning made up in a huge mason jar and ready to go at all times in my pantry since we do taco night almost once a week. It makes the prep time so much faster.

As for the toppings, this recipe uses a simple and light cabbage slaw made with greek yogurt to boost up the veggies and fiber. And everything is drizzled with a chipotle sauce made from a base of greek yogurt as well.

With these healthy ingredient substitutions these tacos are great source of lean protein, healthy whole grains and carbohydrates, and veggies filled with fiber — and they are a perfect meal to keep you on track with your nutrition and fitness goals.

How to Make Skinny Chicken Tacos

For the Chicken Taco Seasoning + How to Make the Chicken

  1. In a small bowl mix together the spices until blended.
  2. Remove the chicken from its package and slice the chicken breasts thin, into 1/4 inch strips. With a paper towel, gently pat the chicken slices dry and place in a medium bowl. 
  3. Drizzle the chicken with olive oil and your spice mixture and gently toss to evenly coat the chicken. (This step can be done ahead of time to meal prep or to allow the chicken to marinate.)
  4. Preheat a large skillet over a medium-high heat.
  5. Saute chicken for 5-8 minutes or until lightly browned and the chicken is cooked through.

How to Make the Cabbage Slaw

  1. In a medium bowl, combine the greek yogurt, lime juice, honey, and salt + pepper to taste to create a marinade for the cabbage slaw.
  2. Add the shredded cabbage and carrot and mix to coat the cabbage. Set it aside until you are ready to assemble your tacos.

How to Make the Spicy Chipotle Sauce

  1. In a blender or food processor, combine ingredients until smooth. Transfer to a small bowl and set asside until assembly.

To Assemble the Tacos:

Grab one of your healthy taco shells, and begin to layer the prepared ingredients onto your shell. Once you have your desired fillings, drizzle chipotle sauce over each taco, spritz with lime juice, and enjoy! πŸ™‚

You can also add on additional toppings or anything that you’re craving. Tacos are so great for a crowd or families because you can make them exactly how you’d like!

Skinny Chicken Taco Topping Ideas

Of course you can also add more toppings to your tacos if you desire.

Some great options would be sliced avocado or guacamole. Or you can add some pico de galo, diced tomatoes, or some fresh salsa. If you like some texture you could top on a few black beans or some brown rice.

For a little extra kick try adding on tiny spoonfuls of diced jalapeno or some diced red onion. If you want a few more vegetables, you could top on some fajita veggies like bell peppers and onion.

Maybe you want to drizzle with a little bit of hot sauce or sprinkle on some cilantro. And my personal favorite — a light dusting of cotija cheese.

These are just a few options, and the sky really is the limit here. 

What to Serve with Skinny Chicken Tacos

There are so many amazing dishes that go with these tacos. You could serve simple Mexican rice with them, like some easy cilantro lime brown rice. 

Or you could serve a tasty Mexican chopped salad with lettuce beans, and a ton of nutrient-rich veggies.

Or simple fajita veggies would be fantastic as well.

These healthy chicken tacos are a perfectly balanced meal to serve on their own or to serve with simple healthy sides to create your own personal fiesta!

How to Meal Prep Skinny Chicken Tacos

Meal prepping these ahead of time are so easy and you have a few different options on how you want to do it. 

You can completely cook and prepare everything, and keep the chicken, the cabbage slaw, and the chipotle sauce seperate from each other until just before servings and building your tacos.

Or if you want to just prep the ingredients to quickly cook everything before you serve that is an option as well.

If you just want to do the prep work only, I would suggest blending your taco seasoning, slicing and storing your chicken in an airtight container, maybe even marinading your chicken, and chopping all the veggies for your cabbage. You can even make the chipotle sauce a day or two in advance. 

When you are ready to serve you tacos, just season and cook the chicken, add the dressing mix to the cabbage slaw, and then assemble your tacos as you would normally. 

You can have a super fresh tasting and hot taco dinner on the table in just 15 minutes with just a little prep ahead of time.

How to Store Leftovers or Meal Prep

To store all of the prepared ingredients for leftovers another day, the best method is to keep everything seperate. 

Store the chicken, cabbage slaw, and the chipotle sauce all in seperate air-tight containers — I like these glass pyrex containers.

All ingredients will keep for about 3-5 days, but personally I think eating your tacos sooner is better, then the slaw doesn’t get too soggy!

How To Reheat

Warm the chicken in the microwave or reheat in a hot skillet for about 2 minutes.

Keep the cabbage slaw and chipotle sauce chilled, or allow it to slightly warm and assemble your tacos as above.

These healthy chicken tacos are made almost the same way as the fish tacos, I just changed up the sauce and cabbage slaw a bit. I can’t decide which is better.

And the best part is…you don’t have to! Both recipes only take about 15-20 minutes each…So why not make both! Oh and don’t forget the Skinny Margaritas! πŸ˜‰

For the Chicken

  • 1 pound boneless, skinless chicken breast
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • salt & pepper to taste
  • juice from 1 lime

For the Cabbage Slaw

  • 3/4 cup red cabbage, shredded
  • 3/4 cup Napa cabbage, shredded
  • 1/2 shredded carrot (about 1 large carrot)
  • 3 tablespoons nonfat Greek yogurt
  • juice from 2 limes
  • 1 teaspoon raw honey (optional)
  • salt & pepper to taste

For the Spicy Chipotle Sauce

  • 1/2 cup nonfat Greek yogurt
  • 12 ancho chili (canned in sauce)


  • 8 sprouted corn tortillas
  • guacamole
  • pico de gallo
  • lime wedges for garnish


For the Chicken

  1. Slice chicken breasts thin, into 1/4 inch strips, and place in a medium bowl. Add remaining ingredients and mix to evenly coat the chicken with olive oil and spices.
  2. Preheat a large skillet over a medium-high heat.
  3. SautΓ© chicken for 5-8 minutes or until lightly browned and the chicken is cooked through.

For the Cabbage Slaw

  1. While the chicken in cooking prepare the cabbage. Combine all ingredients in a medium bowl and set aside.

For the Spicy Chipotle Sauce

  1. In a blender or food processor, combine ingredients until smooth. Spoon mixture into a plastic baggy and cut the corner off to open a 1/4 inch.

To assemble

  1. Arrange chicken, cabbage slaw, pico de gallo, and guacamole on a corn tortilla. Pipe the chipotle sauce over each taco, drizzle with lime juice, and enjoy! πŸ™‚
