- Step 2: Blend Wet IngredientsIn a blender, combine bananas, eggs, cottage cheese, and vanilla extract.Blend until smooth and creamy. Set aside.
- Step 3: Mix Dry IngredientsIn a mixing bowl, whisk together the flour, sugar, baking powder, and baking soda.
- Step 4: Combine Wet and Dry MixturesPour the wet mixture into the bowl with the dry ingredients.Gently fold the batter until just combined. Do not overmix.If using nuts or chocolate chips, fold them in now.
- Step 5: BakePour the batter into the prepared loaf pan, smoothing the top with a spatula.Bake for 55 minutes, covering the top with foil after 35 minutes to prevent over-browning.Check for doneness with a toothpick; it should come out clean.
